vegan & grain free quesadillas

yep, you heard that correctly. you might be asking yourself how a quesadilla can be both grain and dairy free, but let me assure you that with just a few small modifications you can have a pretty perfect, health conscious quesadilla. i started using Siete products a few months ago when i went about 80% grain free with my eating, and they’ve completely delivered every single time. my favorite tortilla is the cassava version, and the nacho chips are insane too. after making tacos for lunch a bunch recently i decided to try something new with similar ingredients.

recipe: makes 1 serving

  • 2 grain free tortillas (i use Siete cassava wraps)

  • 1/2 an avocado, mashed

  • sautéed onion, garlic, and cherry tomatoes

  • 2 tablespoons of black beans (pinto also works!)

  • nutritional yeast

  • seasonings: sea salt, black pepper, crushed red pepper, paprika, chili powder

  • optional: roasted chicken or pan fried tofu

*in a pan, cook onions, garlic, cherry tomatoes, and spices together until tender. lay the tortillas on a plate & once the mixture is done, add mashed avocado and the tomato/onion mixture onto the tortillas. sprinkle some nooch and add the black beans, and place the second tortilla on top and press down. crisp the quesadilla in a pan until both sides are brown and serve with a squeeze of lime and some of your favorite hot sauce :) take a pic of your meal if you make this recipe & tag me on instagram @theflourchild_ in the final product!!!!
