dreamy grain + dairy free creamy mushroom pasta

i don’t follow a diet or have food rules, but i feel my best eating less grains, dairy, and red meat + more vegetables, fruits, and abundant plant foods. i had a huge craving for a cheesy pasta type dish but know dairy usually makes me feel pretty run down and gross, and since i had homemade cashew sauce on hand i figured it would be great in this… and it was !!! since i made the cashew sauce beforehand, this was incredibly quick to make but if you make it the day of it’ll still be just as delicious.

recipe: makes 1 serving

  • 1 serving of Banza pasta (i used cavatappi)

  • 2-3 tablespoons of cashew sauce (blend cashews, water, nutritional yeast, garlic powder, sea salt, and lemon juice in a high speed blender until smooth)

  • 3 cloves of garlic

  • a box of mushrooms

  • red pepper flakes

  • nutritional yeast

    *boil the chickpea pasta until tender, usually about 8 mins. in a pan, cook garlic and mushrooms until golden brown and cooked down. add salt, pepper, red pepper flakes to taste. when the pasta is done cooking, add it to the pan with the cashew sauce and a few tablespoons of pasta water. stir all together with 2 tablespoons of nutritional yeast. top with extra red pepper flakes and enjoy :)
