must have granola recipe

i should probably start off by saying that my family asks me to make a new batch of this omega baked granola once every 3 days. it’s a crowd favorite, incredibly filling, nutrient dense and deliiiiish. i originally found this recipe from Ellen Fisher, a well-known vegan blogger in the health and wellness world, and adapted it with ingredients i had on hand. for example, the OG recipe called for dried cherries and i used dried blueberries, and when i ran out of nut butter i started using powdered peanut butter… small changes like that. you can find the original recipe on Ellen’s instagram page (@ellenfisher), but i’ll drop my adapted version below!

recipe: makes 1 large container of granola

  • 2 1/2 cups of oats

  • 1/2 cup pumpkin seeds

  • 1/4 cup hemp seeds

  • 1/4 cup almonds, chopped

  • 1/4 cup dried fruit (i use dried blueberries)

  • 1/4 cup coconut flakes

  • 2 tbsp nut butter (i use powdered peanut butter)

  • 1/4 cup maple syrup

  • drizzle of vanilla

*mix all of the ingredients together in a bowl, spread on a baking sheet in an even layer, and sprinkle with sea salt. bake in the oven @ 350 for 15 mins, and then toss the granola and bake for another 5-10 mins. let it cool & pack in an air tight jar or a container… then eat it for breakfast every day because it’s so delicious!!!!!!!! i hope you enjoy this recipe as much as i do :)
