crowd pleaser summer rolls
i’ve been making some version of this recipe for years and years now, and honestly it’s really easy to prepare and looks a lot more complex than it actually is (which is 1 of the reasons why it’s such a crowd pleaser). although these are called summer rolls, you can enjoy them in any season and modify the ingredients based on what’s local and fresh for you. when i made these for my family recently we paired it with grilled teriyaki halibut & vegetable sesame soba noodles, but really anything works :)
recipe: makes 10 summer rolls
10 rice paper sheets
15 shrimp, boiled & sliced (can also substitute with baked tofu!)
2 heirloom carrots, thinly sliced
½ an avocado, sliced
bibb lettuce
chopped scallions & mint
*substitute with any vegetables like peppers, cucumbers, napa cabbage…
*before assembling the summer rolls, soak rice paper sheet in room temperature water until softened
peanut sauce:
½ cup peanut butter (can also substitute with almond or cashew butter)
2-3 tablespoons tamari / soy sauce / coconut aminos
2 tablespoons maple syrup
big squeeze of lime juice
1 teaspoon sriracha
water to thin
garnish the whole thing with toasted sesame seeds and herbs & enjoy :)
