Peking Duck Bites

My family’s favorite item to order from our local Chinese restaurant is Peking Duck. Another duck product we happen to love is duck confit, which my dad and I began to love over our trip to France. He was able to pick up some duck confit from a butcher that we planned to eat over New Years Eve, and we wanted to do a fun spin on a small bite utilizing the specialty product. So, Peking Duck Bites were born.

Ingredients

  • 1 Duck confit leg

  • Hoisin sauce

  • A handful of thinly sliced scallions

  • Sesame seeds

  • Rice Crackers

Cut up the duck confit and fry it in a pan with some of the duck fat until it’s crispy. Top each rice cracker with hoisin sauce, a few pieces of crispy duck confit, scallions, and sesame seeds. Enjoy!
